Ingredients

:For the crust

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup (2 sticks) unsalted butter, chilled and cut into small cubes
  • 1/4 to 1/2 cup ice water

:For the filling

  • 6-8 medium-sized apples (Granny Smith, Honeycrisp, or a mix)
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, cut into small pieces

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon sugar (for sprinkling)

 

Instructions

Step 1: Prepare the crust

.Mix dry ingredients: In a large bowl, combine the flour, salt, and sugar

Cut in the butter: Add the chilled butter cubes to the flour mixture. Using a pastry cutter or your hands, blend the butter into the flour until the mixture resembles coarse crumbs.

Add water: Gradually add ice water, a tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork the dough.

.Chill the dough: Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour

 

Step 2: Prepare the filling

.Peel and slice apples: Peel, core, and slice the apples into 1/4-inch thick slices

Mix filling ingredients: In a large bowl, combine the apple slices, sugar, cinnamon, nutmeg, allspice, flour, lemon juice, and vanilla extract. Toss until the apples are evenly coated.

 

Step 3: Assemble the pie

.Preheat the oven: Preheat your oven to 425°F (220°C)

Roll out the dough: On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Carefully transfer it to a 9-inch pie dish, gently pressing it into the bottom and sides.

.Add the filling: Pour the apple filling into the prepared crust, spreading it evenly. Dot the filling with small pieces of butter

Top crust: Roll out the second disc of dough into another 12-inch circle. Place it over the filling. Trim any excess dough, leaving a 1-inch overhang. Fold the overhang under the bottom crust and crimp the edges to seal.

.Vent and brush: Cut a few slits in the top crust to allow steam to escape. Brush the top with the beaten egg and sprinkle with sugar

 

Step 4: Bake the pie

Lower temperature: Reduce the oven temperature to 375°F (190°C) and bake for an additional 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
