4 chicken thighs or chicken pieces

4 medium onions, thinly sliced

1/2 cup extra virgin olive oil

2–3 tablespoons ground sumac

1/2 teaspoon black pepper

2 pieces Palestinian taboon bread or flatbread

How to Make Palestinian Musakhan:

1. Cook the Chicken

Place the chicken pieces in a large pot and cover them with water. Add a little salt and, if desired, a cinnamon stick for extra flavor.

Bring the water to a gentle boil, then reduce the heat and cook for about 25–30 minutes, or until the chicken is cooked through.

Remove the chicken from the pot and set it aside. You can reserve a little of the cooking broth to keep the chicken moist later.

2. Prepare the Onions

Heat the olive oil in a large skillet over medium-low heat. Add the sliced onions and cook slowly for about 15–20 minutes, stirring occasionally.

The onions should become very soft and lightly golden. Avoid cooking them over high heat, as they can burn before becoming tender.

Add the sumac, cumin, coriander, black pepper, and salt. Stir well and cook for another 2–3 minutes so the onions absorb the spices.

3. Prepare the Bread

Place the taboon bread or flatbread on a large baking tray. Spoon some of the seasoned onion mixture and olive oil over the bread, spreading it across the surface.

This allows the bread to absorb the rich onion and olive oil mixture while remaining slightly crisp around the edges.

4. Add the Chicken

Place the cooked chicken pieces on top of the onions. Spoon a little more of the onion mixture over the chicken.

Bake in a preheated oven at 400°F (200°C) for about 10–15 minutes, or until the chicken becomes lightly golden and the bread is warmed through.

5. Garnish and Serve

Remove the Musakhan from the oven and sprinkle toasted pine nuts or almonds over the top. Add a little extra sumac if you enjoy a stronger tangy flavor.

Serve the Musakhan warm, either as one large family-style dish or divided into individual portions.

Good-quality olive oil and sumac make a noticeable difference in Musakhan, so use them generously. The onions should be cooked slowly until soft because they form the flavorful base of the dish.
