Ingredients:

2 medium tomatoes, chopped

1 cucumber, chopped

1 small romaine lettuce, chopped

1/2 red onion, thinly sliced

1/2 cup fresh parsley, chopped

1/4 cup fresh mint leaves, chopped

2 green onions, sliced

1–2 pieces of pita bread

2 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

1 tablespoon pomegranate molasses

1 small garlic clove, minced

1/2 teaspoon sumac

1/2 teaspoon salt

 

How to Make Fattoush:

1. Prepare the Vegetables

Wash all the vegetables thoroughly and dry them well. Chop the tomatoes, cucumber, and romaine lettuce into bite-sized pieces.

Thinly slice the red onion and green onions, then add them to a large salad bowl. Add the chopped parsley and fresh mint.

Keeping the vegetables similar in size makes the salad easier to eat and helps distribute the flavors evenly.

2. Prepare the Pita Bread

Cut the pita bread into small pieces. You can toast them in the oven until crisp or lightly fry them in a little olive oil.

Allow the pieces to cool before adding them to the salad. The crunchy pita is one of the most enjoyable parts of traditional fattoush.

3. Make the Dressing

In a small bowl, whisk together the olive oil, fresh lemon juice, pomegranate molasses, minced garlic, sumac, and salt.

Taste the dressing and adjust the lemon juice or salt according to your preference. If you like a more tangy flavor, add a little extra lemon juice.

4. Combine and Serve

Pour the dressing over the chopped vegetables and gently toss everything together.

Add the toasted pita pieces just before serving and toss once more. This helps keep the bread crisp instead of allowing it to become too soft.

For an attractive finish, sprinkle a little extra sumac over the top and garnish with a few fresh mint or parsley leaves.
