Easy Chicken Shawarma Recipe: Juicy, Flavorful and Homemade

Chicken shawarma is a popular Middle Eastern dish made with tender chicken, warm spices, garlic, lemon, and olive oil. It is known for its delicious combination of savory, tangy, and slightly smoky flavors.
You do not need a traditional shawarma machine to make it at home. With a skillet or oven, you can prepare juicy, well-seasoned chicken that works beautifully in pita bread with fresh vegetables and creamy garlic sauce.
Ingredients:
- 500 g boneless, skinless chicken thighs
- 3 tablespoons plain yogurt
- 2 tablespoons olive oil

- 1/2 teaspoon ground coriander

How to Make Chicken Shawarma:
1. Prepare the Marinade
In a large bowl, combine the yogurt, olive oil, lemon juice, minced garlic, cumin, paprika, coriander, turmeric, cinnamon, salt, black pepper, and chili powder.
Mix everything well until you have a smooth, fragrant marinade.
2. Marinate the Chicken
Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover the bowl and place it in the refrigerator for at least 2 hours.
For deeper flavor, you can leave the chicken to marinate overnight. The yogurt and lemon help tenderize the chicken while the spices give it its distinctive shawarma flavor.
3. Cook the Chicken
Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 6–8 minutes on each side, depending on the thickness of the pieces.

4. Slice and Serve
Allow the chicken to rest for a few minutes before slicing it into thin strips.
Serve the shawarma inside warm pita bread with sliced tomatoes, cucumber, pickles, lettuce, and garlic sauce. You can also add a little tahini sauce for extra flavor.
Helpful Tips
Chicken thighs are a great choice because they stay juicy during cooking, but chicken breast can also be used if preferred.
Do not skip the marinating time if possible. Even a couple of hours allows the chicken to absorb the spices and develop better flavor.
For a more authentic shawarma-style texture, slice the cooked chicken thinly and return it to the hot skillet for a minute or two. The edges will become slightly crispy while the inside remains tender.
