Easy Maqluba Recipe: Middle Eastern Upside-Down Rice

Maqluba is a traditional Middle Eastern dish made with rice, tender chicken, vegetables, and warm spices. The name “Maqluba” means “upside down,” referring to the way the dish is carefully turned onto a serving plate before eating.
It is a comforting family meal that looks impressive when served, but the preparation is quite straightforward. The combination of seasoned rice, tender chicken, and roasted or fried vegetables creates a rich and satisfying flavor in every layer.
Ingredients:
2 cups long-grain rice
500 g chicken thighs or chicken pieces
1 large eggplant, sliced
1 large potato, sliced
1 medium onion, sliced
3 tablespoons olive oil
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon black pepper
1 teaspoon salt, or to taste
3 1/2 cups chicken broth
1 bay leaf, optional
1/4 cup toasted almonds or pine nuts, for garnish
Fresh parsley, optional
How to Make Maqluba:
1. Prepare the Rice
Rinse the rice several times under cold water until the water becomes mostly clear. Soak it in water for about 20–30 minutes, then drain well.
Soaking helps the rice cook more evenly and gives the finished maqluba a better texture.
2. Cook the Chicken
Place the chicken pieces in a pot and cover them with water. Add a little salt and cook over medium heat for about 20–25 minutes, or until the chicken is cooked through.
Remove the chicken and reserve the broth. This flavorful broth will be used to cook the rice.
3. Prepare the Vegetables
Slice the eggplant and potatoes into medium-thick pieces. Brush them lightly with olive oil and roast them in a preheated oven at 220°C (425°F) until tender and lightly golden.
You can also pan-fry the vegetables if preferred. Roasting gives them a lighter texture while still adding plenty of flavor.
4. Layer the Maqluba
Choose a deep, heavy-bottomed pot. Arrange the onion slices at the bottom, followed by the chicken pieces, eggplant, and potatoes.
Mix the drained rice with the cinnamon, cumin, turmeric, black pepper, and salt. Spread the seasoned rice evenly over the vegetables.
Slowly pour in about 3 1/2 cups of warm chicken broth. The liquid should cover the rice without being excessive.
5. Cook the Rice
Bring the pot to a gentle boil over medium heat. Once the liquid begins to simmer, reduce the heat to low and cover the pot.
Cook for about 25–30 minutes, or until the rice is tender and the liquid has been absorbed. Turn off the heat and let the pot rest, covered, for another 10–15 minutes.
6. Turn and Serve
This is the most exciting part. Place a large serving plate over the top of the pot. Carefully and firmly turn the pot upside down in one smooth motion.
Slowly lift the pot and allow the layers to remain stacked on the plate.
Garnish the maqluba with toasted almonds or pine nuts and fresh parsley. Serve it warm with a side of plain yogurt or a fresh salad.
Helpful Tips
Make sure the rice is well drained before layering it. Letting the cooked maqluba rest before turning it over also helps the layers hold together.
Do not rush the final flipping step. Use a plate that is larger than the pot and hold it firmly while turning.
Maqluba is a wonderful dish for family gatherings because it can be prepared in one pot and served as a beautiful centerpiece. With tender chicken, flavorful rice, and delicious vegetables, this traditional Middle Eastern meal is both comforting and satisfying.
