How to prepare
Bring a bowl and put sugar, yeast, warm water and a quarter cup of flour in it, stir and leave them aside for a quarter of an hour until fermentation.
In another deep bowl, put the remaining flour with the starch, salt and vanilla.
Then add the yeast mixture to the flour with salt and stir well until you get a soft dough.
Cover the pot with a towel and leave it for half an hour until it ferments again.
Bring a deep fryer, then put heavy oil, then raise it over medium heat.
Bring a small spoon and dip it in the oil, and also wet one of your hands with the oil so that you can knead the dough.
Form the bites of the judge in the form of small balls using the spoon greased with oil.
Lower the bite of the judge into the oil until it turns light golden in color, then lift it on kitchen paper.
When serving, fry it again to make it golden and crispy.
Dip it in sherbet or powdered sugar.

The secret of the success of the judge's summit
When frying, the oil should be warm, not too hot.
The spoon must be wetted with oil before making the ball so that the dough does not stick.
